- Preheat oven to 400°F (200°C). Grease a mini muffin pan.
- Whisk together cornmeal, flour, baking powder, sugar, and salt in a large bowl.
- In another bowl, whisk eggs, buttermilk, melted butter, and honey until smooth.
- Combine wet and dry ingredients until just mixed. Fold in cheddar cheese, jalapeño, and green onions.
- Fill muffin cups three-quarters full with batter.
- Bake 12–15 minutes until golden brown and cooked through.
- Mix melted butter, honey, and salt for the glaze.
- Brush warm poppers generously with honey butter glaze before serving.
Notes
For extra Southern flavor, add crumbled bacon or extra cheddar cheese to the batter.
