Ingredients
  

Cornbread Batter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 2 eggs large
  • 1 cup buttermilk
  • 0.33 cup unsalted butter melted
  • 0.25 cup honey
  • 1 cup sharp cheddar cheese shredded
  • 1 jalapeño finely diced, optional
  • 2 tbsp green onions chopped
Honey Butter Glaze
  • 0.25 cup unsalted butter melted
  • 3 tbsp honey
  • 1 pinch salt

Method
 

  1. Preheat oven to 400°F (200°C). Grease a mini muffin pan.
  2. Whisk together cornmeal, flour, baking powder, sugar, and salt in a large bowl.
  3. In another bowl, whisk eggs, buttermilk, melted butter, and honey until smooth.
  4. Combine wet and dry ingredients until just mixed. Fold in cheddar cheese, jalapeño, and green onions.
  5. Fill muffin cups three-quarters full with batter.
  6. Bake 12–15 minutes until golden brown and cooked through.
  7. Mix melted butter, honey, and salt for the glaze.
  8. Brush warm poppers generously with honey butter glaze before serving.

Notes

For extra Southern flavor, add crumbled bacon or extra cheddar cheese to the batter.
