Ingredients
  

Chicken Marinade
  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Bowl Ingredients
  • 2 cups cooked rice white or brown
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels grilled or canned
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 0.25 cup red onion finely diced
  • fresh cilantro for garnish
  • lime wedges for serving

Method
 

  1. Whisk olive oil, lime juice, and spices in a bowl to make the marinade.
  2. Coat chicken and let marinate for 15–120 minutes.
  3. Grill or pan-fry chicken 5–6 minutes per side until cooked through; rest and slice.
  4. Prepare rice and toppings while chicken cooks.
  5. Assemble bowls with rice, beans, corn, tomatoes, avocado, and chicken.
  6. Top with dressing, cilantro, and lime wedges.

To meal prep, store ingredients separately and assemble just before serving.
