Ingredients
  

Egg Rolls
  • 2 cups cooked shredded chicken
  • 0.75 cup black beans rinsed and drained
  • 0.75 cup corn kernels
  • 0.5 cup red bell pepper diced
  • 0.5 cup shredded cheese Mexican blend or Monterey Jack
  • 4 oz cream cheese softened
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp smoked paprika
  • 12 egg roll wrappers

Equipment

  • Mixing bowls
  • Deep skillet or fryer
  • Wire rack
  • Tongs

Method
 

  1. Mix chicken, beans, corn, vegetables, cheese, cream cheese, and spices until well combined.
  2. Place filling on egg roll wrappers, fold and roll tightly, sealing edges with water.
  3. Heat oil to 350°F (175°C).
  4. Fry egg rolls in batches until golden and crispy, about 3–4 minutes per side.
  5. Drain on a wire rack and serve hot with dipping sauce.

Notes

Can be baked or air-fried for a lighter option.
