- Preheat oven to 400°F (200°C). Line a baking sheet.

- Bake 40–50 minutes until fork tender.
- Mix all salsa ingredients in a bowl.
- Slice potatoes open and fluff interior.
- Fill with black bean salsa and toppings. Serve warm.
