Ingredients
  

Pasta
  • 12 oz spaghetti
Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1.25 cups heavy cream
  • 0.5 cup parmesan cheese grated
  • 4 cups fresh spinach
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

  • Large skillet
  • Wooden spoon

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and cook briefly.
  4. Stir in cream and simmer until slightly thickened.
  5. Add parmesan cheese and stir until smooth.
  6. Add spinach and cook until wilted.
  7. Toss spaghetti with sauce, adjusting with pasta water if needed.
  8. Season to taste and serve warm.

Notes

Add grilled chicken or shrimp for extra protein if desired.
