- Wash plums thoroughly and dry completely with a towel.
- Whisk egg whites with vanilla extract until slightly frothy.
- Combine granulated sugar and sparkling sugar in a shallow bowl.
- Brush each plum lightly with the egg white mixture.

- Place coated plums on a parchment-lined baking sheet.
