Ingredients
  

Fruit Base
  • 12 fresh plums washed and dried
  • 2 egg whites
  • 1 tsp vanilla extract
  • 2 cups granulated sugar
  • 0.5 cup coarse sparkling sugar
  • 1 tsp lemon zest

Method
 

  1. Wash plums thoroughly and dry completely with a towel.
  2. Whisk egg whites with vanilla extract until slightly frothy.
  3. Combine granulated sugar and sparkling sugar in a shallow bowl.
  4. Brush each plum lightly with the egg white mixture.
  5. Roll plums in the sugar mixture until fully coated.
  6. Place coated plums on a parchment-lined baking sheet.
  7. Allow the plums to dry at room temperature for 60–90 minutes until the coating sets.
  8. Serve immediately or store in a cool place until ready to enjoy.

Notes

Use firm ripe plums and dry them thoroughly before coating for best results.
