Ingredients
  

Chicken Filling
  • 2 cups shredded cooked chicken
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp cayenne pepper adjust to taste
  • salt and pepper to taste
  • 0.5 cup salsa or enchilada sauce
Burrito Assembly
  • 4 large flour tortillas
  • 1 cup cooked rice white or brown
  • 0.75 cup black beans rinsed and drained
  • 1 cup shredded cheese cheddar or Mexican blend
  • 0.5 cup diced tomatoes
  • 0.25 cup fresh cilantro chopped
  • 1 jalapeño sliced, optional

Equipment

  • Mixing bowls

Method
 

  1. Heat olive oil in a skillet. Add onion and cook until soft. Add garlic and cook 30 seconds.
  2. Stir in shredded chicken and seasonings. Add salsa and simmer 5–7 minutes until thickened.
  3. Warm tortillas in a dry skillet until pliable.
  4. Assemble burritos by layering rice, chicken, beans, cheese, and toppings down the center.
  5. Roll tightly, tucking sides in. Toast burritos seam-side down until golden.
  6. Serve warm with sour cream, lime, or extra salsa.

Notes

You can freeze burritos for up to 2 months. Reheat and toast before serving for best results.
