Ingredients
  

Broth
  • 6 cups chicken broth
  • 2 cups water
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 1 tbsp miso paste optional
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
Chicken
  • 2 chicken breasts boneless
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp chili powder
Noodles and Vegetables
  • 4 portions ramen noodles
  • 1 cup mushrooms sliced
  • 1 cup spinach
  • 1 carrot julienned
  • 3 green onions sliced
Toppings
  • 2 soft boiled eggs halved
  • 1 tbsp chili oil optional
  • 1 tsp sesame seeds

Method
 

  1. Season chicken with soy sauce, sesame oil, and chili powder. Cook in skillet until done, then slice.
  2. Sauté garlic and ginger in sesame oil in a large pot until fragrant.
  3. Add broth, water, soy sauce, chili paste, miso, vinegar, and honey. Simmer 10–15 minutes.
  4. Add mushrooms and carrots, cooking until tender.
  5. Cook noodles separately according to package instructions.
  6. Add spinach to broth and cook until wilted.
  7. Divide noodles into bowls and ladle broth over them.
  8. Top with sliced chicken, eggs, green onions, and chili oil before serving.

Notes

Adjust spice level to taste and add your favorite toppings for variety.
