Ingredients
  

Salad
  • 4 cucumbers thinly sliced
  • 2 cloves garlic minced
  • 2 tbsp chili oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 0.5 tsp salt
  • 1 tsp sesame seeds toasted
  • 2 green onions sliced

Method
 

  1. Slice cucumbers into thin rounds and place in a bowl.
  2. Sprinkle cucumbers with salt and allow them to rest for 10 minutes.
  3. Drain excess liquid released from the cucumbers.
  4. In a small bowl, whisk together chili oil, soy sauce, rice vinegar, sesame oil, sugar, and garlic.
  5. Pour dressing over cucumbers and toss well.
  6. Add sesame seeds and sliced green onions.
  7. Let the salad rest for a few minutes before serving to allow flavors to develop.

Notes

For extra crunch, use Persian cucumbers and serve immediately after tossing.
