- Slice cucumbers into thin rounds and place in a bowl.
- Sprinkle cucumbers with salt and allow them to rest for 10 minutes.
- Drain excess liquid released from the cucumbers.
- In a small bowl, whisk together chili oil, soy sauce, rice vinegar, sesame oil, sugar, and garlic.
- Pour dressing over cucumbers and toss well.
- Add sesame seeds and sliced green onions.
- Let the salad rest for a few minutes before serving to allow flavors to develop.
Notes
For extra crunch, use Persian cucumbers and serve immediately after tossing.
