Ingredients
  

Roasted Carrots
  • 1.5 lbs carrots peeled and cut into sticks
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 1 tsp chili flakes
  • 0.5 tsp garlic powder
Hot Honey Glaze
  • 2-3 tbsp hot honey
Finishing Touch
  • 0.5 cup feta cheese crumbled
  • 1 tsp fresh thyme
  • 1 tsp lemon zest optional

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare carrots by peeling and cutting them into even sticks.
  3. Toss carrots with olive oil, salt, pepper, garlic powder, and chili flakes.
  4. Spread carrots evenly on baking sheet and roast for 25–30 minutes, flipping halfway.
  5. Remove from oven and drizzle hot honey over warm carrots.
  6. Sprinkle crumbled feta, thyme, and lemon zest over the top before serving.

Notes

For best flavor, add hot honey after roasting to preserve its glaze and prevent burning.
