Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare carrots by peeling and cutting them into even sticks.
- Toss carrots with olive oil, salt, pepper, garlic powder, and chili flakes.
- Spread carrots evenly on baking sheet and roast for 25–30 minutes, flipping halfway.
- Remove from oven and drizzle hot honey over warm carrots.
- Sprinkle crumbled feta, thyme, and lemon zest over the top before serving.
Notes
For best flavor, add hot honey after roasting to preserve its glaze and prevent burning.
