  • 250 g spaghetti
  • 2 tbsp olive oil
  • 4 tomatoes chopped
  • 4 cloves garlic minced
  • 1 tsp chili flakes
  • 1 tsp paprika
  • salt to taste
  • black pepper to taste
  • 1 tsp sugar optional
  • 0.5 cup pasta water
  • fresh basil chopped
  • 0.25 cup parmesan cheese optional

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil and sauté garlic until fragrant.
  3. Add tomatoes, chili flakes, paprika, salt, pepper, and sugar. Simmer until thick.
  4. Toss cooked spaghetti with sauce and a bit of pasta water.
  5. Let pasta sit in pan to crisp, then flip sections to fry evenly.
  6. Garnish with basil and parmesan, then serve hot.

Notes

Adjust spice level to taste and serve immediately for best texture.
