Ingredients
  

Bowl Base
  • 4 cups cauliflower florets
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes
  • 12 oz spicy sausage sliced
  • 3 cups cooked grains rice or quinoa
Optional Sauce
  • 0.5 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Roast cauliflower for 20–25 minutes, flipping halfway, until golden and tender.
  4. Cook sliced sausage in a skillet over medium heat until browned.
  5. Prepare grains if not already cooked.
  6. Whisk yogurt, lemon juice, and mustard for the sauce if using.
  7. Assemble bowls with grains, cauliflower, sausage, and sauce. Serve warm.

Notes

Adjust spice level by choosing mild or hot sausage and varying red pepper flakes.
