Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss cauliflower with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Roast cauliflower for 20–25 minutes, flipping halfway, until golden and tender.
- Cook sliced sausage in a skillet over medium heat until browned.
- Prepare grains if not already cooked.
- Whisk yogurt, lemon juice, and mustard for the sauce if using.
- Assemble bowls with grains, cauliflower, sausage, and sauce. Serve warm.
