Ingredients
  

Salad
  • 4 cups romaine lettuce chopped
  • 2 cups grilled chicken breast sliced
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 0.5 cup shredded cheese
  • 0.5 cup tortilla strips
  • 0.25 cup red onion chopped
  • 0.25 cup cilantro chopped
Spicy Dressing
  • 0.5 cup mayonnaise or Greek yogurt
  • 2 tbsp sour cream
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 1 tsp hot sauce
  • 1 tsp honey
  • 1 tbsp lime juice

Equipment

Method
 

  1. Whisk together all dressing ingredients until smooth and refrigerate.
  2. Place chopped lettuce into a large bowl.
  3. Add grilled chicken, beans, corn, tomatoes, onion, and avocado.
  4. Top with shredded cheese, tortilla strips, and cilantro.
  5. Drizzle dressing over salad just before serving and toss gently.

Notes

Adjust spice level by increasing or reducing hot sauce and chili powder.
