Method
- Press tofu and cut into cubes.
- Toss tofu with cornstarch and season lightly.
- Pan-fry tofu in oil until golden on all sides. Remove from pan.
- Sauté garlic and ginger in the same pan until fragrant.
- Stir in curry paste, then add coconut milk and soy sauce.
- Simmer sauce gently for 5 minutes.
- Return tofu to pan and coat with sauce.
- Finish with lime juice and serve hot.
Notes
Adjust spice level by increasing or reducing curry paste and chili.
