Ingredients
  

Tofu
  • 14 oz extra-firm tofu pressed and cubed
  • 2 tbsp cornstarch optional
Coconut Sauce
  • 1 cup coconut milk full-fat
  • 2 tbsp red curry paste
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp soy sauce
  • 1 tsp lime juice

Method
 

  1. Press tofu and cut into cubes.
  2. Toss tofu with cornstarch and season lightly.
  3. Pan-fry tofu in oil until golden on all sides. Remove from pan.
  4. Sauté garlic and ginger in the same pan until fragrant.
  5. Stir in curry paste, then add coconut milk and soy sauce.
  6. Simmer sauce gently for 5 minutes.
  7. Return tofu to pan and coat with sauce.
  8. Finish with lime juice and serve hot.

Notes

Adjust spice level by increasing or reducing curry paste and chili.
