Ingredients
  

Sushi Rice
  • 2 cups sushi rice uncooked
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
Spicy Tuna Filling
  • 8 oz sushi-grade tuna diced
  • 3 tbsp mayonnaise
  • 2 tbsp sriracha
  • 1 tsp soy sauce
Volcano Topping
  • 1 cup imitation crab chopped
  • 3 oz cream cheese softened
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha

Equipment

  • Bamboo sushi mat
  • Sharp knife
  • Mixing bowls
  • Baking sheet

Method
 

  1. Cook sushi rice and season with vinegar, sugar, and salt. Let cool.
  2. Mix tuna with mayonnaise, sriracha, and soy sauce.
  3. Combine crab, cream cheese, mayonnaise, and sriracha for topping.
  4. Assemble rolls with rice, tuna, and avocado, then slice.
  5. Top rolls with volcano mixture and bake until bubbly.

Best served fresh and warm.
