Spicy Vodka Pasta with Creamy Burrata

Ingredients
  

Pasta
  • 12 oz penne pasta
Sauce
  • 2 tbsp olive oil
  • 1 onion small, finely diced
  • 3 cloves garlic minced
  • 0.5 tsp red chili flakes adjust to taste
  • 0.5 cup vodka
  • 14 oz crushed tomatoes
  • 0.75 cup heavy cream
  • salt and black pepper to taste
  • 1 ball burrata cheese
  • fresh basil leaves for garnish
  • grated Parmesan optional

Method
 

  1. Bring a large pot of salted water to a boil. Cook penne until al dente, drain, and reserve 1/2 cup pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion for 3–4 minutes until translucent.
  3. Add minced garlic and chili flakes, cook for 30 seconds until fragrant.
  4. Pour in vodka and simmer for 2–3 minutes to cook off alcohol.
  5. Add crushed tomatoes, season with salt and pepper, and simmer for 8–10 minutes.
  6. Reduce heat to low, stir in heavy cream, and adjust consistency with reserved pasta water.
  7. Toss cooked penne in sauce for 1–2 minutes.
  8. Serve with burrata on top, garnish with basil and optional Parmesan.

Notes

For extra heat, add a pinch more chili flakes or a drizzle of chili oil.
