Method
- Bring a large pot of salted water to a boil. Cook penne until al dente, drain, and reserve 1/2 cup pasta water.
- In a large skillet, heat olive oil over medium heat. Sauté diced onion for 3–4 minutes until translucent.
- Add minced garlic and chili flakes, cook for 30 seconds until fragrant.
- Pour in vodka and simmer for 2–3 minutes to cook off alcohol.
- Add crushed tomatoes, season with salt and pepper, and simmer for 8–10 minutes.
- Reduce heat to low, stir in heavy cream, and adjust consistency with reserved pasta water.
- Toss cooked penne in sauce for 1–2 minutes.
- Serve with burrata on top, garnish with basil and optional Parmesan.
Notes
For extra heat, add a pinch more chili flakes or a drizzle of chili oil.
