- Cook rigatoni in salted boiling water until al dente. Reserve pasta water and drain.
- Season steak cubes with salt and pepper.
- Sear steak in hot olive oil until browned. Add butter, baste, and remove from pan.
- In same pan, sauté garlic in olive oil until fragrant.
- Add tomato paste and red pepper flakes; cook until aromatic.
- Deglaze pan with vodka and reduce slightly.
- Stir in heavy cream and Parmesan until smooth.
- Add pasta and pasta water as needed. Fold in steak and serve.
Notes
Adjust spice level by reducing or increasing red pepper flakes.
