Bread & Butter
  • 8 slices sourdough bread or whole grain bread, ½-inch thick
  • 4 tbsp butter softened for spreading
Spinach Feta Filling
  • 4 oz cream cheese softened to room temperature
  • 2 cups fresh baby spinach roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1/4 tsp black pepper freshly ground
  • 1/8 tsp salt or to taste

Method
 

  1. In a mixing bowl, combine softened cream cheese, chopped spinach, crumbled feta, and minced garlic. Season with salt and pepper, then mix until well combined and creamy.
  2. Lay out 8 slices of bread. Spread the spinach-feta mixture evenly on 4 slices, leaving a small border around the edges.
  3. Top the filling with shredded mozzarella cheese, then place the remaining 4 bread slices on top to form sandwiches.
  4. Butter the outside of each sandwich generously, ensuring even coverage for golden browning.
  5. Heat a large skillet or griddle over medium-low heat. Place sandwiches in the pan and cook for 3-4 minutes until the bottom is golden brown and crispy.
  6. Carefully flip sandwiches and cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
  7. Remove from heat and let cool for 1-2 minutes before slicing diagonally. Serve immediately while hot and crispy with soup, salad, or your favorite sides.

Notes

For best results, use room temperature cream cheese for easy mixing. Don't overfill sandwiches to prevent spillage. Cook on medium-low heat to ensure the bread doesn't burn before the cheese melts. Try adding sun-dried tomatoes or caramelized onions for extra flavor. Can be made with whole wheat or gluten-free bread.
