Squash
  • 1 spaghetti squash halved
  • 2 tbsp olive oil
Filling
  • 3 cups spinach chopped
  • 1 cup artichoke hearts chopped
  • 3 cloves garlic minced
  • 4 oz cream cheese
  • 0.5 cup sour cream
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C). Prepare squash and roast cut-side down.
