Ingredients
  

Pasta Base
  • 12 oz pasta (penne or rigatoni)
  • 2 cups cooked chicken breast shredded or diced
  • 3 cups fresh spinach roughly chopped
  • 1 tbsp olive oil
Creamy Spinach Sauce
  • 4 cloves garlic minced
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 cup mozzarella cheese shredded
Seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp onion powder
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup pasta water reserved

Equipment

  • Large pot
  • Large skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente, then reserve pasta water and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add cooked chicken and warm through evenly.
  4. Lower heat and mix in cream cheese until fully melted.
  5. Add heavy cream, parmesan, and mozzarella, stirring until smooth and creamy.
  6. Stir in spinach and cook until just wilted.
  7. Season with salt, pepper, onion powder, and red pepper flakes.
  8. Combine pasta with sauce, adding pasta water if needed to loosen.
  9. Serve hot topped with extra cheese if desired.

Notes

Best served immediately while creamy and hot. Add extra parmesan for stronger flavor.
