Ingredients
  

  • 1 lb ground chicken
  • 1 cup fresh spinach finely chopped
  • 0.5 cup feta cheese crumbled
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup onion finely diced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine all ingredients in a large bowl and mix gently until just combined.
  3. Form mixture into evenly sized meatballs and place on prepared baking sheet.
  4. Bake for 18–22 minutes until fully cooked and lightly golden.
  5. Rest for 5 minutes before serving.

Notes

Do not overmix to keep meatballs tender.
