Ingredients
  

Filling
  • 2 cups fresh spinach leaves washed and chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • salt and black pepper to taste
  • 4 large flour tortillas

  • Mixing bowls

Method
 

  1. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, 3–4 minutes. Add garlic and cook 30 seconds.
  2. Add chopped spinach and cook until wilted, 2 minutes. Season with salt and pepper. Remove from heat.
  3. Lay one tortilla flat. Sprinkle mozzarella, then spinach mixture, and crumbled feta on half. Fold over.
  4. Heat a clean skillet over medium heat. Cook quesadilla 2–3 minutes per side until golden and cheese melts.
  5. Repeat with remaining tortillas and filling.
  6. Cut into wedges and serve with sour cream or salsa.

Notes

Optional: add jalapeños or herbs for extra flavor.
