Method
- Heat olive oil in a skillet over medium heat. Sauté onion until translucent, 3–4 minutes. Add garlic and cook 30 seconds.
- Add chopped spinach and cook until wilted, 2 minutes. Season with salt and pepper. Remove from heat.
- Lay one tortilla flat. Sprinkle mozzarella, then spinach mixture, and crumbled feta on half. Fold over.
- Heat a clean skillet over medium heat. Cook quesadilla 2–3 minutes per side until golden and cheese melts.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with sour cream or salsa.
Notes
Optional: add jalapeños or herbs for extra flavor.
