Salad
  • 8 cups baby spinach
  • 2 cans mandarin oranges drained
  • 1 small red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1 cup sliced almonds toasted
  • 0.5 cup dried cranberries optional
Poppyseed Dressing
  • 0.5 cup olive oil
  • 0.25 cup apple cider vinegar
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 1 tbsp poppy seeds
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Wash and dry spinach thoroughly.
  2. Place spinach in a large serving bowl.
  3. Add mandarin oranges, red onion, feta, almonds, and cranberries.
  4. Whisk together all dressing ingredients until smooth.
  5. Pour dressing over salad just before serving.
  6. Toss gently and serve immediately.

Notes

For best freshness, store dressing separately and toss right before serving. Add grilled chicken for a complete meal.
