Ingredients
  

Steak Bowl
  • 1.5 lb flank or sirloin steak
  • 2 ears of corn husks removed
  • 2 avocados sliced
  • 2 cups cooked rice
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp cumin
Cilantro Cream Sauce
  • 0.5 cup sour cream or Greek yogurt
  • 0.5 cup fresh cilantro
  • 1 clove garlic
  • 1 tbsp lime juice

Equipment

  • Cast iron skillet or grill pan
  • Baking sheet
  • Blender or food processor
  • Sharp knife

Method
 

  1. Season steak with oil, spices, salt, and pepper. Rest at room temperature.
  2. Roast corn at 425°F until lightly charred. Slice kernels from cob.
  3. Sear steak over high heat 4–6 minutes per side. Rest before slicing.
  4. Blend cilantro cream sauce ingredients until smooth.
  5. Assemble bowls with rice, steak, corn, avocado, and sauce.
