  • 2 sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 2 steaks ribeye or sirloin
  • 4 cups mixed greens
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
Dressing
  • 3 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with oil and spices, then roast for 25–30 minutes.
  3. Season and cook steak in skillet until desired doneness.
  4. Rest steak and slice thinly.
  5. Prepare dressing by whisking all ingredients together.
  6. Assemble bowls with greens, sweet potatoes, steak, and toppings.
  7. Drizzle dressing and serve.
