Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 2 tbsp cornstarch
  • 1 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup fresh strawberries finely chopped
  • 2 tbsp strawberry jam
Strawberry Glaze
  • 1 cup powdered sugar
  • 2 tbsp strawberry puree
  • 1 tsp milk

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, salt, and cornstarch in a medium bowl.
  3. Beat butter and sugar until light and fluffy.
  4. Mix in egg and vanilla extract until combined.
  5. Add chopped strawberries and strawberry jam.
  6. Gradually mix dry ingredients into wet ingredients until a soft dough forms.
  7. Scoop dough onto prepared baking sheets and flatten slightly.
  8. Bake 12–14 minutes until edges are lightly golden.
  9. Cool cookies completely on a wire rack.
  10. Prepare glaze by whisking powdered sugar, strawberry puree, and milk together.
  11. Drizzle glaze over cooled cookies and allow to set before serving.

Notes

Pat strawberries dry before adding to dough to prevent excess moisture. Chill dough if needed for thicker cookies.
