- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, salt, and cornstarch in a medium bowl.
- Beat butter and sugar until light and fluffy.
- Mix in egg and vanilla extract until combined.
- Add chopped strawberries and strawberry jam.
- Gradually mix dry ingredients into wet ingredients until a soft dough forms.
- Scoop dough onto prepared baking sheets and flatten slightly.
- Bake 12–14 minutes until edges are lightly golden.
- Cool cookies completely on a wire rack.
- Prepare glaze by whisking powdered sugar, strawberry puree, and milk together.
- Drizzle glaze over cooled cookies and allow to set before serving.
Notes
Pat strawberries dry before adding to dough to prevent excess moisture. Chill dough if needed for thicker cookies.
