Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 1 cup warm milk
  • 0.33 cup granulated sugar
  • 0.33 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp salt
Cinnamon Filling
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar
  • 1 tbsp ground cinnamon
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
Strawberry Filling
  • 1.5 cups fresh strawberries diced
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
Cream Cheese Glaze
  • 4 oz cream cheese softened
  • 2 tbsp butter softened
  • 1.5 cups powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Combine warm milk, yeast, and a small amount of sugar. Let sit until foamy.
  2. Mix in butter, eggs, sugar, salt, and flour until a soft dough forms.
  3. Knead dough until smooth, then let rise until doubled in size.
  4. Cook strawberries with sugar, cornstarch, and lemon juice until thickened. Cool completely.
  5. Beat cream cheese, sugar, and vanilla until smooth for cheesecake filling.
  6. Roll dough into a rectangle and spread with butter.
  7. Sprinkle cinnamon sugar mixture evenly over dough.
  8. Spread cheesecake filling and strawberry mixture across dough.
  9. Roll tightly into a log and slice into 12 rolls.
  10. Place in greased baking dish and allow to rise again until puffy.
  11. Bake at 350°F for 25–30 minutes until golden brown.
  12. Prepare cream cheese glaze and spread over warm cinnamon rolls before serving.

Notes

For best flavor, use fresh strawberries and serve the rolls warm with extra cream cheese glaze.
