Method
- Preheat oven to 325°F (160°C). Prepare crust and bake 10 minutes.
- Beat cream cheese until smooth. Add sugar, sour cream, vanilla, and lemon juice.
- Add eggs one at a time. Mix in flour and salt.
- Pour filling over crust. Bake in water bath 60–70 minutes.
- Cool gradually, then refrigerate at least 4 hours.
- Cook strawberry topping ingredients until thickened. Cool completely.
- Top cheesecake before serving and slice.
Notes
For best texture, chill overnight before serving.
