Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 3 tbsp granulated sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 0.75 cup sour cream
  • 3 eggs large
  • 1 tbsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tbsp all-purpose flour
  • 0.25 tsp salt
Strawberry Topping
  • 2 cups fresh strawberries sliced
  • 0.33 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

Equipment

  • Mixing bowls
  • Springform pan
  • Roasting pan
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (160°C). Prepare crust and bake 10 minutes.
  2. Beat cream cheese until smooth. Add sugar, sour cream, vanilla, and lemon juice.
  3. Add eggs one at a time. Mix in flour and salt.
  4. Pour filling over crust. Bake in water bath 60–70 minutes.
  5. Cool gradually, then refrigerate at least 4 hours.
  6. Cook strawberry topping ingredients until thickened. Cool completely.
  7. Top cheesecake before serving and slice.

Notes

For best texture, chill overnight before serving.
