Ingredients
  

Strawberry Syrup
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 cup water
Cream Soda Assembly
  • 1/2 cup heavy cream
  • 1 1/2 cups sparkling water or club soda
  • to taste ice cubes

Method
 

  1. In a small saucepan, combine strawberries, sugar, and water. Bring to a simmer over medium heat and cook for about 5 minutes, stirring occasionally, until strawberries are soft and sugar dissolves. Remove from heat and let cool. Strain to remove solids.
  2. Fill two glasses with ice cubes. Pour 2-3 tablespoons of the strawberry syrup into each glass, add 1/4 cup heavy cream, then top with sparkling water. Stir gently to combine.
  3. Serve immediately with a straw and garnish with a fresh strawberry if desired.

Notes

For a richer flavor, use whipped cream instead of heavy cream on top.
