Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk flour, oats, baking powder, baking soda, salt, and cinnamon together.
- Cream butter and brown sugar until fluffy, then add egg and vanilla.
- Combine wet and dry ingredients, alternating with milk until a dough forms.
- Fold in chopped strawberries gently.
- Scoop dough onto baking sheet and flatten slightly.
- Bake 12–15 minutes until lightly golden. Cool completely.
- Beat butter, powdered sugar, strawberry puree, vanilla, and milk to make icing.
- Spread icing over cooled cookies and let set before serving.
Notes
Do not ice warm cookies. For stronger strawberry flavor, reduce puree before mixing into icing.
