Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1.5 cups rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup milk
  • 0.5 cup fresh strawberries finely chopped
Strawberry Icing
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 2-3 tbsp strawberry puree
  • 1 tsp vanilla extract
  • 1-2 tbsp milk

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, oats, baking powder, baking soda, salt, and cinnamon together.
  3. Cream butter and brown sugar until fluffy, then add egg and vanilla.
  4. Combine wet and dry ingredients, alternating with milk until a dough forms.
  5. Fold in chopped strawberries gently.
  6. Scoop dough onto baking sheet and flatten slightly.
  7. Bake 12–15 minutes until lightly golden. Cool completely.
  8. Beat butter, powdered sugar, strawberry puree, vanilla, and milk to make icing.
  9. Spread icing over cooled cookies and let set before serving.

Notes

Do not ice warm cookies. For stronger strawberry flavor, reduce puree before mixing into icing.
