Ingredients
  

Roasted Sweet Potatoes
  • 2 sweet potatoes peeled and diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
Seasoned Beef
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
Street Corn Mix
  • 2 cups corn kernels
  • 0.25 cup sour cream
  • 2 tbsp mayonnaise
  • 1 lime juiced
  • 0.33 cup cotija cheese crumbled
  • 2 tbsp cilantro chopped

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, paprika, chili powder, garlic powder, and salt.
  3. Spread potatoes on baking sheet and roast 20–25 minutes until tender and slightly crispy.
  4. Heat olive oil in a skillet and cook minced garlic until fragrant.
  5. Add ground beef and cook until browned, breaking apart with a spatula.
  6. Season beef with cumin, chili powder, paprika, salt, and pepper and cook 2 minutes more.
  7. In a bowl mix corn, sour cream, mayonnaise, lime juice, chili powder, cotija cheese, and cilantro.
  8. Assemble bowls with sweet potatoes, beef, and street corn mixture, then add toppings and serve.

Notes

You can substitute ground turkey or chicken for beef and add cilantro lime rice for a heartier bowl.
