Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 bell peppers diced
  • 4 cups beef broth
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato sauce 15 oz
  • 0.75 cup white rice uncooked

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Brown ground beef until fully cooked; drain excess fat.
  3. Add onion and garlic; cook until softened.
  4. Stir in bell peppers and seasonings.
  5. Add tomatoes, tomato sauce, broth, and rice.
  6. Simmer 25–30 minutes until rice is tender.

Notes

Soup thickens as it sits; add broth when reheating if needed.
