Ingredients
  

Fruit Salad
  • 3 cups watermelon cubed
  • 2 cups strawberries hulled and halved
  • 1.5 cups blueberries
  • 2 cups mango peeled and diced
  • 1 cup grapes halved
Honey-Lime Dressing
  • 3 tbsp honey or maple syrup for vegan
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tbsp fresh mint chopped

Method
 

  1. Prepare all fruits as directed: cube the watermelon, hull and halve the strawberries, dice the mango, halve the grapes, and keep blueberries whole.
  2. In a small mixing bowl, whisk together honey, fresh lime juice, lime zest, and chopped mint until well combined.
  3. Place all prepared fruits in a large mixing bowl. Pour the honey-lime dressing over the fruit and toss gently to coat evenly.
  4. Serve immediately for best flavor, or chill in the refrigerator for up to 2 hours before serving.

Notes

For a vegan version, replace honey with maple syrup or agave nectar. You can add kiwi, pineapple, or peaches for extra variety. Best served the same day for optimal freshness.
