Method
- Heat olive oil in a skillet and sear the short ribs on all sides until browned.
- Place onions and garlic at the bottom of the crockpot.
- Mix tomato paste, broth, wine, Worcestershire, brown sugar, and spices; pour over ribs.
- Cover and cook on LOW 8–9 hours or HIGH 4–5 hours until tender.
- Remove ribs and strain cooking liquid. Thicken sauce with cornstarch if desired.
- Serve ribs topped with sauce and garnish with parsley.
Notes
For a richer flavor, sear the ribs before slow cooking. Great served with mashed potatoes or polenta.
