Ingredients
  

Beef Short Ribs
  • 3-4 lbs beef short ribs bone-in preferred
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 0.5 cup red wine optional
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 bay leaves
  • 1 tbsp cornstarch optional, for thickening
  • fresh parsley for garnish

Equipment

  • Crockpot or slow cooker
  • Mixing bowls
  • Tongs
  • Skillet

Method
 

  1. Heat olive oil in a skillet and sear the short ribs on all sides until browned.
  2. Place onions and garlic at the bottom of the crockpot.
  3. Mix tomato paste, broth, wine, Worcestershire, brown sugar, and spices; pour over ribs.
  4. Cover and cook on LOW 8–9 hours or HIGH 4–5 hours until tender.
  5. Remove ribs and strain cooking liquid. Thicken sauce with cornstarch if desired.
  6. Serve ribs topped with sauce and garnish with parsley.

Notes

For a richer flavor, sear the ribs before slow cooking. Great served with mashed potatoes or polenta.
