Sweet Alabama Pecanbread
  • 1 cup chopped pecans toasted
  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter melted and cooled
  • 4 eggs large
  • 2 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan or line with parchment.
  2. Toast pecans on a baking sheet for 5–7 minutes until fragrant.
  3. Whisk flour, baking powder, and salt in a large bowl.
  4. In another bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
  5. Beat in eggs one at a time, then stir in vanilla.
  6. Fold dry mixture into wet ingredients until combined.
  7. Stir in toasted pecans.
  8. Pour batter into prepared pan and bake 30–35 minutes until golden.
  9. Cool completely before slicing into squares and serving.

Notes

For extra flavor, brown the butter before adding it to the batter.
