Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 egg large
  • 1 tbsp milk
  • 2 tsp vanilla extract
  • 1 tsp blue gel food coloring adjust as needed
  • 0.75 cup white chocolate chips optional
Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugars until light and fluffy. Add egg, milk, and vanilla extract.
  4. Mix in blue food coloring until desired shade is reached.
  5. Gradually mix in dry ingredients until combined. Fold in white chocolate chips if using.
  6. Scoop dough onto baking sheets, spacing 2 inches apart. Flatten slightly.
  7. Bake 10–12 minutes until edges are set. Cool completely on wire racks.
  8. Beat filling ingredients until smooth. Sandwich cookies if desired.

Notes

Use gel food coloring for the most vibrant results. Chill dough if spreading occurs.
