Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugars until light and fluffy. Add egg, milk, and vanilla extract.
- Mix in blue food coloring until desired shade is reached.
- Gradually mix in dry ingredients until combined. Fold in white chocolate chips if using.
- Scoop dough onto baking sheets, spacing 2 inches apart. Flatten slightly.
- Bake 10–12 minutes until edges are set. Cool completely on wire racks.
- Beat filling ingredients until smooth. Sandwich cookies if desired.
Notes
Use gel food coloring for the most vibrant results. Chill dough if spreading occurs.
