Tender glazed salmon served over jasmine rice with fresh veggies and a drizzle of sweet chili sauce.

Ingredients
  

Sweet Chili Salmon
  • 4 fillets salmon about 6 oz each
  • 0.33 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp sesame oil
  • 1 tsp garlic minced
  • 0.5 tsp chili flakes optional
Bowls
  • 2 cups jasmine rice cooked
  • 0.5 cup shredded carrots
  • 0.5 cup cucumber slices
  • 0.25 cup red cabbage thinly sliced
  • 2 tbsp cilantro chopped
  • 1 tbsp sesame seeds toasted
Quick Sauce
  • 0.25 cup Greek yogurt or mayo
  • 1 tbsp sweet chili sauce
  • 1 tsp lime juice
  • 0.5 tsp soy sauce

Equipment

  • Mixing bowls

  • Foil or parchment paper

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Mix sweet chili sauce, soy sauce, lime juice, sesame oil, garlic, and chili flakes.
  3. Brush glaze over salmon fillets and place on baking sheet.
  4. Bake 12–15 minutes, broiling for 1–2 minutes at the end for caramelization.
  5. Assemble bowls with rice, vegetables, and salmon.
  6. Drizzle glaze and sauce over top, garnish with cilantro and sesame seeds.

Notes

For a spicy kick, add sriracha to the glaze or sauce.
