Shortbread Cookies
  • 1 cup unsalted butter softened
  • 0.67 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup mini chocolate chips
  • 0.5 cup toffee bits

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat butter and powdered sugar until creamy. Add vanilla.
  3. Mix in flour and salt until dough forms.
  4. Fold in chocolate chips and toffee bits.
  5. Form dough balls, flatten slightly, and place on baking sheet.
  6. Bake 12–15 minutes or until edges are lightly golden.

Notes

Chill dough 20 minutes for cleaner edges. Mini chocolate chips distribute best.
