Ingredients
  

Chicken
  • 2 lbs boneless skinless chicken thighs
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Mango Glaze
  • 2 large ripe mangoes peeled and diced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
Garnish
  • 2 green onions sliced
  • 1 tbsp sesame seeds
  • 0.25 cup fresh cilantro optional

Equipment

  • Blender or food processor
  • Large skillet
  • Medium saucepan
  • Mixing bowls

Method
 

  1. Blend mangoes until smooth and transfer to a saucepan.
  2. Add soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil. Simmer 5–7 minutes.
  3. Mix cornstarch and water, then stir into sauce. Cook until thickened.
  4. Season chicken with salt and pepper.
  5. Heat sesame oil in a skillet and sear chicken 5–6 minutes per side.
  6. Pour glaze over chicken and continue cooking until chicken reaches 165°F.
  7. Coat chicken thoroughly with glaze and allow sauce to caramelize slightly.
  8. Garnish with green onions, sesame seeds, and cilantro before serving.

Notes

For extra heat, add sriracha or red pepper flakes to the mango glaze.
