Method
- Blend mangoes until smooth and transfer to a saucepan.
- Add soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil. Simmer 5–7 minutes.
- Mix cornstarch and water, then stir into sauce. Cook until thickened.
- Season chicken with salt and pepper.
- Heat sesame oil in a skillet and sear chicken 5–6 minutes per side.
- Pour glaze over chicken and continue cooking until chicken reaches 165°F.
- Coat chicken thoroughly with glaze and allow sauce to caramelize slightly.
- Garnish with green onions, sesame seeds, and cilantro before serving.
Notes
For extra heat, add sriracha or red pepper flakes to the mango glaze.
