  • 2 cups sliced mushrooms
  • 4 slices Swiss cheese
  • 4 slices sourdough bread
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh thyme
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Add mushrooms and cook until browned and tender.
  3. Stir in garlic, thyme, salt, and pepper; cook briefly.
  4. Butter bread slices and assemble sandwich with cheese and mushrooms.
  5. Cook in skillet until golden and cheese is melted.

Notes

Cook mushrooms slowly for maximum flavor and avoid high heat when grilling the sandwich.
