  • 4 cups brioche bread cubed
  • 3 eggs large
  • 0.75 cup milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp brown sugar
  • 2 tbsp unsalted butter
  • 0.5 cup maple syrup plus more for serving

Method
 

  1. Whisk eggs, milk, vanilla, cinnamon, and brown sugar in a bowl.
  2. Add bread cubes and toss gently to coat. Rest 5 minutes.
  3. Melt butter in a skillet over medium heat.
  4. Cook bread cubes until golden on all sides, turning often.
  5. Reduce heat and drizzle syrup over the bites, tossing gently.
  6. Cook 1–2 minutes until syrup soaks in. Serve warm.

Notes

Use day-old bread for best texture and real maple syrup for optimal flavor.
