Ingredients
  

Cookie Dough
  • 1 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup tahini well stirred
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 0.25 cup dark chocolate chopped
  • 1 tbsp flaky sea salt for topping

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, baking powder, and salt in a bowl.
  3. Beat butter, tahini, brown sugar, and granulated sugar until creamy.
  4. Add egg and vanilla extract and mix until combined.
  5. Gradually mix dry ingredients into wet ingredients until dough forms.
  6. Fold in chocolate chips and chopped chocolate.
  7. Scoop dough onto prepared baking sheets, spacing cookies apart.
  8. Top with extra chocolate pieces if desired.
  9. Bake 10–12 minutes until edges are lightly golden.
  10. Sprinkle with flaky sea salt and cool before serving.

Notes

For extra chewy cookies, chill the dough for 30 minutes before baking.
