Ingredients
  

Chicken
  • 2 chicken breasts boneless skinless
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika smoked
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste
Vegetables
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 cup diced tomatoes
  • 0.5 cup black beans
  • 0.5 cup corn
  • 1 cup cheese shredded

Equipment

  • Large skillet
  • Knife
  • Cutting board
  • Spatula

Method
 

  1. Heat oil and cook seasoned chicken until golden and cooked through.
  2. Remove chicken and sauté vegetables in the same pan.
  3. Add garlic, tomatoes, beans, and corn and simmer.
  4. Return sliced chicken to skillet and top with cheese.
  5. Cover until cheese melts, garnish, and serve.

Notes

Adjust spice level as desired. Great for meal prep and leftovers.
