Ingredients
  

Chili
  • 2 lbs beef chuck cubed
  • 2 tbsp vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 3 tbsp chili powder
  • 2 ancho chilies dried
  • 2 guajillo chilies dried
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 2 cups beef broth

Method
 

  1. Soak dried chilies and blend into a smooth paste.
  2. Sear beef in hot oil until browned, then remove.
  3. Cook onions and garlic until softened.
  4. Add spices and toast briefly.
  5. Add chili paste and broth, then return beef.
  6. Simmer for 2 to 2.5 hours until tender.
  7. Adjust seasoning and serve hot.

Notes

For deeper flavor, let chili rest before serving or refrigerate overnight.
