Ingredients
  

Main Wrap
  • 2 cups cooked shredded chicken
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 0.5 cup shredded carrots
  • 0.5 red bell pepper thinly sliced
  • 0.25 cup fresh cilantro chopped
Peanut Sauce
  • 0.25 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp lime juice
  • 1 clove garlic minced
  • 1-2 tbsp warm water to thin sauce

Method
 

  1. Whisk together peanut butter, soy sauce, honey, lime juice, and garlic. Thin with warm water to desired consistency.
  2. Lay tortillas flat and spread 1–2 tablespoons of peanut sauce on each.
  3. Divide chicken among tortillas. Top with lettuce, carrots, bell pepper, and cilantro. Drizzle with extra peanut sauce.
  4. Fold sides in and roll up tightly. Slice in half diagonally and serve immediately.

Notes

Store unrolled wraps (chicken and veggies) in fridge up to 2 days. Assemble before serving for best texture.
