Ingredients
  

  • 3 cups green peas fresh or frozen
  • 4 oz pancetta diced
  • 1 pear ripe but firm, diced
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp honey optional
  • 1 tsp fresh thyme leaves
  • salt and pepper to taste
  • 1 tbsp lemon juice optional

Method
 

  1. Cook pancetta in a skillet over medium heat for 5–7 minutes until crisp. Remove and set aside.
  2. Add butter and olive oil to the skillet. Sauté diced pears for 3–4 minutes until golden and tender.
  3. Stir in peas and cook 3–5 minutes until heated through and bright green.
  4. Season with thyme, salt, pepper, and honey if desired. Stir in crisp pancetta.
  5. Finish with lemon juice before serving and toss gently.

Notes

Serve warm as a side dish to turkey, ham, or roasted vegetables. Add toasted nuts for extra crunch.
