  • 1 lb spinach fresh or frozen
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 2 tbsp flour
  • 1 cup milk
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.25 tsp nutmeg
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook spinach until wilted, drain, and chop.
  2. Melt butter and sauté garlic.
  3. Whisk in flour and cook briefly.
  4. Add milk and cream, whisk until thickened.
  5. Stir in parmesan and seasoning.
  6. Combine spinach with sauce and simmer.
  7. Serve warm.

Notes

Drain spinach well to avoid watery sauce. Adjust seasoning to taste.
