Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.5 cups milk
  • 2 tbsp unsalted butter melted
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • as needed butter or oil for pan

  • Nonstick skillet or crepe pan
  • Whisk or blender
  • Spatula

Method
 

  1. Whisk together flour, sugar, and salt in a bowl.
  2. In another bowl, beat eggs, milk, melted butter, and vanilla.
  3. Gradually combine wet and dry ingredients until smooth.
  4. Let batter rest for 20–30 minutes.
  5. Heat and lightly grease a nonstick skillet.
  6. Pour batter into pan and swirl thinly.
  7. Cook until lightly golden, flip, and finish cooking.
  8. Repeat with remaining batter and serve with desired fillings.

Notes

For best results, allow batter to rest before cooking. Serve sweet or savory.
