Ingredients
  

Stir Fry
  • 2 lbs boneless skinless chicken breast thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 zucchini sliced
  • 1 cup snap peas
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
Sauce
  • 0.25 cup coconut aminos
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tsp sugar-free chili garlic sauce
  • 1 tsp monk fruit sweetener

Equipment

  • Large skillet or wok
  • Mixing bowls

Method
 

  1. Whisk together all sauce ingredients in a bowl.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a wok over medium-high heat and cook chicken until browned. Remove and set aside.
  4. Add sesame oil and stir fry vegetables until crisp-tender.
  5. Add garlic and ginger, cooking briefly until fragrant.
  6. Return chicken to skillet and pour in sauce.
  7. Toss well and cook until heated through.
  8. Serve hot, garnished with sesame seeds and green onions.

Notes

Serve with cauliflower rice for a complete keto-friendly meal. Adjust spice level to taste.
