Ingredients
  

Peruvian Chicken
  • 1 whole chicken 3½–4 lbs
  • 3 tbsp olive oil
  • 5 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
Aji Verde Sauce
  • 1 cup fresh cilantro
  • 2 jalapeños seeded
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt
Cilantro-Lime Rice
  • 1.5 cups white rice
  • 0.25 cup fresh cilantro chopped
  • 1 lime juiced

Equipment

Method
 

  1. Mix spices, garlic, oil, and lime to form marinade.
  2. Rub chicken thoroughly and marinate at least 2 hours.
  3. Roast at 425°F (220°C) for 45–55 minutes until cooked through.
  4. Blend all aji verde ingredients until smooth.
  5. Cook rice, then stir in cilantro and lime juice.
  6. Serve chicken over rice with aji verde sauce.

Notes

Adjust spice level by adding or removing jalapeño seeds.
